Edamame Dumpling and Soba Bowl

Get those forks (or chopsticks, cus they’re soo much more fun) ready folks! There are so many yummy things going on here that we wouldn’t blame you if you needed to take a moment. Okay- let’s get to it now…you’ve got dumplings stuffed with edamame and shiitake mushrooms all nestled on a bed of buckwheat soba noodles. We tossed in some carrots, pickled ginger, and miso Japanese eggplant. This is the perfect intro to eggplant newbies or those who are tentative to give this colorful veg a go. Top it all off with a sesame dressing… edamame-dumpling-loving friends, rejoice! 

Total prep time: 5 minutes 

What’s in your bag:

  • Your bowl
  • Sesame dressing

What you’ll need from home:

  • Nothing!

How to prep:

Enjoy hot: toss in the microwave for 2-3 minutes, drizzle with dressing, and enjoy! 

Note: if you like your dumplings crispy, you can also air fry them at 400F for 5-7 minutes 🙂

Or cold: Drizzle with dressing and enjoy as is!
