Edamame Dumpling and Soba Bowl

Get those forks (or chopsticks, cus they’re soo much more fun) ready folks! There are so many yummy things going on here that we wouldn’t blame you if you needed to take a moment. Okay- let’s get to it now…you’ve got dumplings stuffed with edamame and shiitake mushrooms all nestled on a bed of buckwheat soba noodles. We tossed in some carrots + pickled ginger, snap peas + fresh herbs, and also miso Japanese eggplant. This is the perfect intro to eggplant newbies or those who are tentative to give this colorful veg a go. Top it all off with a soy-ginger dressing… edamame-dumpling-loving friends, rejoice! 

Total prep time: 2-7 minutes 

What’s in your bag:

  • Your bowl
  • Carrots + pickled ginger
  • Soy-ginger dressing

What you’ll need from home:

  • One damp paper towel!

How to prep:

Enjoy hot: Remove the ramekins of carrots + ginger and dressing. Top your bowl with a damp paper towel, then toss in the microwave for 2-3 minutes. Drizzle with dressing, add your carrots + pickled ginger, and enjoy! 

Or cold: Drizzle with dressing, add your carrots + pickled ginger, and enjoy as is!
