This is the perfect intro to eggplant newbies or those who are tentative to give this colorful veg a go. Top it all off with a soy-ginger dressing… edamame-dumpling-loving friends, rejoice!

How to prep:
Enjoy hot: Remove the ramekins of carrots + ginger and dressing. Top your bowl with a damp paper towel, then toss in the microwave for 2-3 minutes. Drizzle with dressing, add your carrots + pickled ginger, and enjoy!
