Edamame Dumpling and Soba Bowl

Get those forks (or chopsticks!) ready folks. There are so many yummy things going on here that we wouldn’t blame you if you needed to take a moment. Okay- let’s get to it now: You’ve got edamame + shiitake-stuffed dumplings nestled on a bed of buckwheat soba noodles. We tossed in some carrots + pickled ginger, snap peas + fresh herbs, and also miso-marinated Japanese eggplant. This is the perfect intro to eggplant for newbies or those who are tentative to give this colorful veg a go. Top it all off with the soy-ginger dressing… Edamame-dumpling-loving friends, rejoice! 

Total prep time: 3 minutes

What’s in your bag:

  • Your bowl
  • Carrots + pickled ginger
  • Soy-ginger dressing

What you’ll need from home:

  • One damp paper towel!

How to prep:

  1. Remove the lid and the ramekins of carrots + ginger and dressing.
  2. Top your bowl with a damp paper towel, then toss in the microwave for 2-3 minutes. 
  3. Drizzle with dressing, add your carrots + pickled ginger
  4. Dig in!
