Epic Brunch Situation

We know, we know. Everyone wants to know: how did we come up with this super creative, descriptive and unique name for this brunch spread today? We can’t give ya all our secrets, people. It’s brunch time and it’s gonna be an epic situation. Here at WECO, we love both savory and sweet brunch options, which is why your meal today includes both! Enjoy both at the same time (crazy, we know) or maybe save your cinnamon rolls for breakfast-dessert? Or maybe a second breakfast for all you Lord of the Rings fans? You do you, Fam.

What’s in your bag:

  • Sausage + biscuit bake OR huevos rancheros (depending on which you ordered!)
  • Cinnamon rolls (these are parbaked and best enjoyed warm!)

What you’ll need from home:

  • Small casserole dish
  • Nonstick cooking spray

NOTE: Freezing your brunch for later? No problem! 

  • Sausage + biscuit bake: toss it in the freezer.
  • Huevos rancheros: toss ‘em in the freezer, tortillas too. The guacamole is best enjoyed ASAP!
  • Cinnamon rolls: toss ‘em in an airtight container with the icing and then in the freezer.

When you’re ready to enjoy, toss everything in the fridge for 24 hours (or until fully thawed) and follow the instructions on the back to heat 🙂

Total prep time: 15-25 minutes

The Sausage + Biscuit Bake

  1. Preheat the oven to 375F.
  2. Remove the lid to your sausage + biscuit bake and place in the oven for 20-25 minutes or until warmed to your liking. 

The Huevos Rancheros

  1. Preheat the oven to 375F.
  2. Remove the lid to your huevos rancheros and place in the oven for 10-12 minutes or until warmed to your liking.

The Tortillas: While your huevos rancheros are in the oven, warm up your tortillas! You can heat them over an open flame for 5-10 seconds per side, stick them in a nonstick pan, or put them in an oven for 1 min or so.

  1. Remove your huevos rancheros carefully from the oven.
  2. To serve, spoon onto a warmed tortilla and top with a spoonful of guacamole!

The Cinnamon Rolls

  1. These are parbaked and best enjoyed warm! Preheat the oven to 375F.
  2. Remove the vanilla icing from your box of cinnamon rolls and leave out at room temperature while your oven preheats.
  3. Lightly grease your small casserole dish with nonstick cooking spray. Place your cinnamon rolls in the dish and toss in the oven for 8-10 minutes.
  4. Remove carefully from the oven and spread your icing on the warm cinnamon rolls. Enjoy!
