Grilled Shrimp with Mango Salsa

We’ve got shrimp! Don’t worry, no shrimp puns this time. Just a delicious meal with our current favorite vegetable, (yes it changes depending on the time of day and season) bok choy! The first step of our bok choy prep was, in the wise, wise words of Chef Matt, “Super simple. pick your favorite person, and maybe it’s you, and tell them to zest all the limes using the microplane. Yay!” So, the moral of the story is, this bok choy is bright, zesty and delicious. Enjoy each bite with your honey and lemon flavored wild rice, and your shrimpies too!

Total prep time: 1-2 minutes

What’s in your bag:

  • Grilled shrimp, baby bok choy + wild rice with preserved lemon + sundried tomato 
  • Mango salsa 

What you’ll need from home:

  • Nada! Well, maybe a fork…

How to prep:

  1. Remove the lid to your container and take out your ramekin of mango salsa.
  2. Microwave your container for 1-2 minutes.
  3. Add your mango salsa back in and devour!
