Guest Chef: Sekali Curry Laksa

So, Fam, are you ready to get your slurpppppp on? Good! Because this bangin’ bowlful of deliciousness (from award-winning pop-up, Sekali) is designed for it. 

Don’t be shy on the sound effects as you dive in to Chef Teh’s take on the iconic Malaysian soup. Proudly and loudly slurp up that fragrant, complex curry coconut broth and springy, thick udon noodles. And feel free to let out some “mmmms” as you enjoy bites of flavor-packed curried chicken, soft tofu, hard-boiled egg, crunchy cuke and tender bok choy. Don’t stop ‘til you make it disappear!   

What’s in your bag:

  • Udon noodles and bok choy
  • Curry coconut broth
  • Shredded chicken thigh; puffed tofu; fish tofu; hard-boiled egg; and cilantro & cucumbers
  • Sambal shrimp (if you ordered it!)

What you’ll need from home:

  • Small saucepan
  • Large pot
  • Tongs

Total prep time: 8-10 minutes

The Broth, Puffed Tofu, Fish Tofu  and Chicken

  1. Pour the curry coconut broth into a small saucepan and heat over medium, about 3-5 minutes or until just simmering. Careful not to let it boil!
  2. When you’ve got about 1 minute to go, toss in your shredded chicken, puffed tofu, and fish tofu to get them nice and hot.
  3. If you ordered the sambal shrimp, you can add it in with the broth now too! Or, if you want to heat it separately, pop it in a 350F oven on a foil-lined sheet tray for 10 minutes or so. 

The Udon and Bok Choy

  1. Bring a large pot of salted water to boil, and have some tongs on hand.
  2. Drop in the noodles and bok choy and let them cook for about 90 seconds. Make sure to test for doneness! 
  3. Use your tongs to pull the noodles and greens out, give them a shake, and pop them right into the bottom of your serving bowl. 

Assembly time! 

  1. Pour the warm broth with all of its goodies over the noodles and bok choy. Feel free to arrange the components and make it all fancy or just toss them in.
  2. Add in your hard-boiled egg, and garnish with cilantro and cukes as desired. 

Then, grab some utensils and dive in! Don’t forget— slurp, slurp, slurp 😉
