Guest Chef: Sekali’s Nasi Lemak

Seriously, Fam. How absolutely blue-tiful is this meal? You can thank blue pea flower for the eye-catching coloration of this tasty coconut rice. Blue pea flower, and the amazingly talented Chef Derrick Teh, of award-winning pop-up restaurant, Sekali. 

His rendition of this classic Malaysian dish is truly a celebration of flavor and texture. Crisp and crunch from the toasty peanuts, salty ‘chovies, and cool cucumber… Umami from the savory, earthy mushroom XO, and tingly heat from the sambal chili sauce… We hope you enjoy every last bite 🙂 

Total prep time: 2-3 minutes or 10-15 minutes (depending on heating option!)

What’s in your bag:

  • Your coconut pea flower rice bowl with broccoli, mushroom XO, Malaysian sambal, & hard-boiled egg
  • Toasted peanuts, crispy anchovies, & cucumber 
  • Curry roasted chicken thigh (if you ordered it!)
  • Sambal shrimp (if you ordered it!)

What you’ll need from home:

  • Casserole dish (For oven option)
  • Utensils and an appetite!

How to prep:

Option #1 (in the microwave)

  1. Remove both ramekins and egg, and set aside.
  2. If you opted for the curry roasted chicken or sambal shrimp, add it on top of the rice!
  3. Dollop the mushroom XO over the broccoli.
  4. Place a damp paper towel over your uncovered bowl and microwave for 2-3 minutes, until hot and steamy.
  5. To plate, garnish as desired with peanuts, crispy ‘chovies, cukes, and egg. Serve with sambal on top (but start light, this packs some heat!). 
  6. Dig in!! (But maybe snap a pic first ‘cause it’s so pretty?)

Option #2 (in the oven):

  1. Preheat the oven to 350F. Remove the egg and ramekins of sambal and mushroom XO.
  2. Spoon the rice and broccoli into a casserole dish, then dollop the mushroom XO sauce over the broccoli. 
  3. Pop the dish into the oven for 10-15 minutes or until everything is warmed through. If you ordered sambal shrimp or curry roasted chicken thigh, you can warm them in the casserole dish with the rice!
  4. When ready, transfer the rice and XO broccoli onto your plate. Garnish as desired with peanuts, crispy ‘chovies, cukes, and egg. Serve with sambal on top (but start light, this packs some heat!). 
  5. Dig in!! (But maybe snap a pic first ‘cause it’s so pretty?)
