Labor Day Grill Kits!

SHHHHH!  DO NOT say end of summer! Well, it’s not over, because we say it’s not.  At least for this weekend.  Who doesn’t love summer? It has so many delights, but much that is great comes off the grill.  So fire yours up and let’s get at it!  First of all, we have faith in you – tons of what we gave you (and it’s a lot!) is pretty straightforward and you know what to do with it.  Pickles?  Come on, you got this.  Nibble out the middles and wear them like rings.  On to the serious stuff! What are you waiting for? Get in there!

 

For the ribs:

Drop the ribs right onto a hot grill for 2-3 minutes on the first side, flip, paint artfully with the sauce of your choice (dare we suggest half and half?).  Wait another 2-3 minutes and flip.  Paint, 2-3 minutes and flip.  2-3 more minutes and you’re done.  Just like that – hot, caramelized and delicious.  If no grill is available, set your oven to 400F. Place the ribs face up on a foil-lined sheet tray. Splash a little water on the tray bottom, just enough to generate a bit of steam, and cover the ribs with more aluminum foil. Bake for 5-10 minutes, until they are hot all the way through. Once hot, remove the top layer of foil, and set your oven to high broil. Broil for 2-3 minutes, rotating the tray halfway, to give the ribs some caramelization and crust. Slather with the sauce of your choice!

 

For the burgers:

We have been told over and over that these are the best burgers ever – not our words, yours.  Season how you like – our season salt, your favorite spice rub, or naked.  Your call.  4-6 minutes on the grill or stovetop on each side depending on your ideal doneness.  Toast the Hawaiian sweet roll?  Add the cheddar? Secret sauce?  Pickles?  Ahhhhh – so many choices!

 

For the veggie burgers:

We are so excited about these – WECO special recipe by way of Chef Matt.  Healthy and indulgent – who knew?  Pretty much the same approach as the burgers, but we gave you a cherry for the sundae – well, actually one of Ray’s amazing tomatoes to slice and top your creation.  Or you could just eat it like an apple. It’s that good! And don’t forget that avocado ranch – required reading!

 

For the sides:

mac+cheese – 350°oven for 10/15 minutes till hot and breadcrumbs are crunchy

maple sweet potato mash – 350°oven for 10/15 minutes till hot and a little caramelized

napa cabbage slaw – B-U-T-ful exactly as it is!

jalapeno-cheddar cornbread – pop it on the grill/in the oven till nice and toasty!
