Lemon + Olive Braised Boneless Chicken Thigh

When it comes to chicken, sometimes the thigh doesn’t always get the same love that the breast does— but really, it should! The cut gets a lot of love from culinary pros who favor its versatility and rich, juicy flavor. We just can’t get over how the lemon + olive braise—which is spiked with dijon, white wine, garlic and tomato paste—plays up the chicken’s natural talents and gives it that just-right level of tang and zest! 

Total prep time: 2-3 minutes

What’s in your bag:

  • Lemon + olive braised chicken thigh, pearled couscous, braised kale + Swiss chard 
  • Lemon vinaigrette

What you’ll need from home:

  • Aluminum foil lined sheet tray

How to prep:

  1. Preheat the oven to 400F.
  2. Place your chicken thigh on the aluminum foil lined sheet tray and pop in the oven for 5-7 minutes or until warmed to your liking. 
  3. Remove the ramekin of vinaigrette from your bowl and place the bowl in the microwave for 2 minutes.
  4. Place your warmed chicken thigh back in your bowl, drizzle the vinaigrette over the top and mix it in!
  5. Enjoy 🙂
