Lobster Pot Pie

It’s a pot pie palooza… but with lobstah! Glad to see ya tonight, peeps! Ever since y’all gobbled up those delish chicken and mushroom pot pies the other week, Chef Matt KNEW he wanted to bring a fresh new recipe to the table, involving lobster, obviously. Tonight your pot pie set up is a little different— you’ll combine your bisque with the lobster + veggie filling, top it with the flakiest and tastiest puff pastry, and then toss it in the oven! This prevents the lobster from overcooking and yields the most fabulous result. There’s also Brussels sprouts on the side as well… gotta switch it up from a salad every once in a while 😉 (Though we do love our salads <3)

What’s in your bag:

  • Lobster claw, tail + knuckle meat with sherry, roasted parsnips, rainbow carrots, pearl onions + peas
  • Creamy saffron + tomato bisque
  • Buttery puff pastry crust
  • Roasted Brussels sprouts

What you’ll need from home:

  • Aluminum foil lined sheet tray
  • Saucepan  

Total prep time: 20 minutes

The Brussels Sprouts

  1. Preheat the oven to 400F.
  2. Arrange your Brussels evenly on an aluminum foil line sheet tray. 
  3. Toss ‘em in the oven for 10-15 minutes or until warmed through. We’d recommend doing this 5 minutes or so before you plan on putting your pot pie in the oven. 

The Pot Pie

  1. Preheat the oven to 400F.
  2. Grab your saucepan and pour in your creamy saffron + tomato bisque. Heat over medium heat for 5-7 minutes or until just simmering, stirring occasionally. Once done, remove from heat.
  3. Remove the lid to your filling (yenno, the yummy lobster meat and veggies!) and carefully pour your bisque into your tin.
  4. Stir, stir, stir to mix the bisque with your filling! 
  5. Take your puff pastry and place it on top. 
  6. Pop your pot pie in the oven for 10 minutes. Since the bisque is already warm, it shouldn’t take too long in the oven (we don’t want to overcook that tasty lobster!)

Scoop your pot pie and crust into a shallow bowl, (you can also chow right outta the container) and enjoy those Brussels on the side! Bone-apple-teeth! (Bon appetit hehe)
