Mapo Tofu + Broccoli

Part of what I am so grateful for is having an audience that understands and appreciates what we cook. It’s different than a restaurant- on so many levels. We are not putting together dishes that are meant to be big selling items, or fancy expressions, or even personal art pieces. We are just cooking food that we love, and that we want to share with you. Most of the time, these ideas are not our own. They are simply things that we wish to emulate or share. The bowl tonight is one of my all time favorite things to eat. So many memories and experiences are associated with this simple dish. This is not our creation. We are simply sharing a taste and flavor that inspired us to create. Mapo tofu is usually prepared with pork, and the real deal mapo tofu doesn’t look anything like this. However, all the flavors are there, and even though it isn’t being served piping hot from a wok, as it should be, we’re very happy with how it came out. Fluffy rice and a silky smooth sauce studded with firm tofu, scallions, and roasted broccoli, all topped off with fried shallots. Comfort food at its finest. To reheat, simply pop the whole bowl in the microwave for 2-3 minutes (I don’t know how long microwaves take, so just get it hot…!). Once it’s hot, mix it all up and enjoy.
