Mapo Tofu Caponata Bowl

We here at WECO are a cook-outside-the-lines kind of crew, which is how this delightful and unexpected culinary worlds mash-up came to be. The caponata travels slightly away from Sicilian tradition–featuring instead Japanese eggplant, sesame oil, pickled ginger, and a little jalapeno–but not entirely. There’s still tomato in the mix and the pine nut for crunch, as well as sweet-sour golden raisins. In Italy you’d likely find this condiment on bruschetta or as a side to a meat or fish, but we’re HERE for you with more veggie-centric dishes, which is why it’s partnered with a whole lotta flavor-packed marinated tofu.
