It’s the return of the mushroom noodles! Like Return of the Jedi, but better (sorry Star Wars fans but we stand by this). This dish is a no-brainer in this cool-but-not-cool weather; can’t go wrong with roasted mushrooms, caramelized spring onions, sprouts and chewy soft egg noodles. We roasted and sauteed all these veggies, lightly poached the noodles, and mixed them together with a delicious sauce. Just counting on you to bring them to life with a quick pan-fry!
