Hi Fam, can you believe it? We’re saying goodbye to our dear friend 2022? We think these tasty eats are the perfect way to ring in the new year and celebrate all the wonderful things to come (there’s gonna be a lot!). Whether you’re in your jammies or jammin’ to some festive tunes, (or both?) thanks for letting us celebrate with you! We’d recommend reading through these instructions once, then getting started… you got this!
DINNER
Lobster Pot Pie
- Preheat the oven to 400F.
- Grab your saucepan and pour in your creamy saffron + tomato bisque. Heat over medium heat for 5-7 minutes or until just simmering, stirring occasionally. Once done, remove from heat.
- Remove the lid to your filling (yenno, the yummy lobster meat and veggies!) and carefully pour your bisque into your tin. Stir, stir, stir to mix the bisque with your filling!
- Take your puff pastries and place them on top.
- Pop your pot pie in the oven for 10 minutes. Since the bisque is already warm, it shouldn’t take too long in the oven (we don’t want to overcook that tasty lobster!)
- For the Brussels sprouts: Toss ‘em in the oven for 10-15 minutes or until warmed through. We’d recommend doing this 5 minutes or so before you plan on putting your pot pie in the oven.
- To serve: Scoop your pot pie and crust into a shallow bowl, (you can also chow right outta the container) and enjoy those Brussels on the side 🙂
NYE Strip Steak
- Preheat the oven to 375F.
- Pace your paprika roasted potatoes + blistered broccoli on a foil-lined sheet tray. Toss in the oven for 10-15 minutes.
- While your veggies are in the oven, heat a small sauté pan over medium heat, and add a drizzle of olive oil.
- Add your steak to the pan and sear for 1-2 minutes on each side. Cook a little longer if you like a more well-done steak!
- Remove the steak from the pan and allow it to rest.
- Reduce the heat on your sauté pan to low. Add a small splash of water to deglaze the pan, using a spatula to scrape up all those yummy browned bits from the steak.
- Add your peppercorn + cognac sauce to the pan and heat over low, stirring frequently, until it just begins to reach a simmer. If you like, stir in a pat of butter here too!
- To serve: Slice your steak into half-inch slices. Pour your peppercorn + cognac sauce over steak and enjoy with broccoli and potatoes!
Butternut Risotto with Truffle Crumble
- Pour all of your rice and half of your vegetable stock into your sauté pan. Heat on medium, stirring constantly, until the liquid starts to bubble.
- Spoon all of your squash puree into the pan with your rice mixture and stir to distribute evenly. Next, scoop in your butternut + delicata squash and stir it up.
- How’s everything looking? A little thick? Add a couple spoonfuls of your leftover stock into the risotto and stir!
- Repeat step 3 with as much of your desired leftover stock as you want until your risotto is at the desired texture. It should be thick, but still spread a bit when you spoon it onto your plate. Top with your truffle Parm crumble + enjoy your cold roasted beet + pistachio salad on the side 🙂
Kids Pizza Kit
- Preheat your oven to 425 degrees
- Assemble your pizza with your toppings of choice (tomato sauce, shredded cheese, pepperoni and pesto)
- Pop in the oven for 10-12 minutes!
Pink Grapefruit Sparkler
- Pour into a glass and top with champagne or seltzer! Easy!
BRUNCH
Mushroom Egg Cups
- Preheat the oven to 350F.
- Place egg cups on an aluminum foil lined sheet tray and toss in the oven for 8-10 minutes or until warmed to your liking.
Lamb + Sweet Potato Hash
- This one is as easy as it gets! Toss a pat of butter and a splash of water in a pan on medium heat. Hash goes in.
- Crisp the hash. Stir the hash. Eat the hash 🙂
Chive + Cheddar Scones
- Warm ‘em up in the toaster, or in a 350F oven for 2-5 minutes!
And that’s it! New Years Eve served, New Years Eve solved. #weareWECO
