Paneer Tikka Masala

Hi Fam, how are you? We hope that enjoying this extraordinary Paneer Tikka Masala brings some joy to your day 🙂 Today’s all-star lineup features a paneer tikka masala (made with standout ingredients like coconut milk, garam masala, and ginger), cinnamon + cardamom basmati rice, roasted cauliflower + golden raisins, and garlic naan— we know you love this naan! If you’ve never had paneer before, today’s the day and we’re so heckin’ pumped for you to try it! It’s a soft, mild Indian cheese that melds perfectly into this tikka masala.

While your tikka masala is simmering, let your cauliflower + naan get all roasty-toasty together in the oven & warm up your rice in the microwave or on the stove – do what works for you!

Go secure your WECO bag and let’s get cookin’.

What’s in your bag:

  • Paneer tikka masala
  • Roasted cauliflower + golden raisins
  • Cilantro mint yogurt
  • Basmati rice
  • Garlic naan

What you’ll need from home:

  • A pot
  • A saute pan
  • An aluminum foil-lined sheet tray

Total prep time: 10-15 minutes

The Paneer Tikka Masala

  1. Pour masala into a pot. Heat on medium heat, stirring occasionally, for 8-10 minutes or until warmed through. Feel free to add a splash of water and adjust to desired consistency.

The Cauliflower + Naan

  1. Heat oven to 350 degrees
  2. Place cauliflower on one half of your aluminum foil-lined sheet tray (no need to include the raisins yet, we’ll get to those later!) and place your tray in the oven for 7-10 minutes or until warmed through. With 3-4 minutes left, add your naan.
  3. Remove carefully.

The Rice

Two options here:

Option #1: (Recommended) Get a saute pan hot with a  teaspoon of oil over medium heat. Pop in the rice and toss ‘til hot and a little bit crispy, just a few minutes.

Option #2: Put the rice in a microwave safe bowl. Drizzle a teaspoon or two of water over it. Heat it for 2-3 minutes.

The Cilantro Mint Yogurt

  1. Cold is the way to go!

To serve, spoon the rice on your plate and ladle the tikka masala over. On the side, add your cauliflower and naan. Make sure you sprinkle your raisins all over the cauliflower! Yogurt goes on the naan, or as a dollop on the masala. Enjoy!

That’s it! Dinner solved, dinner served. #weareWECO
