Picnic Dinner

Okay Fam, here’s the plan: grab that blanket that’s been sitting in the garage, or a beach towel from last summer. Grab those red plastic cups sitting in the closet from your cousin’s birthday party last summer too. Pack a seltzer, a juice box, a bottle of wine or whatever you’ve got in your fridge. You’ll also need a fork, a knife, and some paper plates if you’ve got those. Toss it all in a bag and get the heck outside! You can assemble your sandwiches ahead of time, leave the caprese salad and tabbouleh in their containers (we love when things are easy peasy like that) and just hit the road. Maybe head to a soccer field near your house, that picnic bench down the street, or even your back porch. Sound like a plan? Sounds like a plan. Let us know the spot, we’ll meet ya there 😉

What’s in your bag:

  • Chicken salad
  • Brioche buns
  • Arugula pesto
  • Caprese salad
  • Farro tabbouleh

What you’ll need from home:

  • Nothing!

Total prep time: 5 minutes

The Chicken Salad, Brioche Buns, and Arugula Pesto

  1. You’re the sandwich artist today! Create your own masterpiece. We think a light spread of pesto on each side of your brioche bun is a great place to start.
  2. Top with your chicken salad, and that’s it! If you’re feeling craaaazy, you could even spoon some caprese salad on there too.

The Caprese Salad

  1. Best served cold!

The Farro Tabbouleh

  1. Best served cold!

Assemble your sandwich, and grab a fork for your sides!

That’s it! Dinner solved, dinner served. #weareWECO
