Roasted Beet and Feta Salad

If you’re feeling a little “beet up” from the weekend, we feel ya there…there’s no such thing as too much fun! Whether you were hitting the slopes or chillin’ at home, fuel up for the rest of this week with this super bowl of nutrients, jam packed with beets (of course), golden quinoa, fennel, and honey sumac almonds for a crunch. This will keep the party going, if ya know what we mean. The feta on top really is the icing on the cake—metaphorically of course. We would take cake any day over feta. Sorry, feta! If you don’t have a drink to go with your bowl, no problem! You can simply drink the dressing, it’s that good. Okay maybe not. A glass of water (or wine) is probably a better idea. 

Total prep time: 2 minutes

What’s in your bag:

  • A big bowl of yumminess 
  • Feta & almonds
  • Sesame mint vinaigrette 

What you’ll need from home:

  • Nada.

How to prep:

  1. Take the cover off of your bowl.
  2. Sprinkle the feta and almonds on top. 
  3. Dress away!
  4. Chow time.
