Roasted Eggplant + Farro Bowl

It’s the eggplant train, and it’s leaving the station! One of the best veggies out there. We know sometimes people avoid them because in the grocery store, they look huge and difficult to understand. Enter WECO! Here to do the tough stuff for ya 🙂  Anyway, beautiful eggplants are roasted to perfection with black garlic and rest over perfectly poached farro and barley, wood ear mushrooms, blistered cherry tomatoes, fresh basil, field greens and feta. And now we need to discuss the Meyer lemon vin. One of our best, if we do say so ourselves! A great, light complement to the bold flavors in every bite of this bowl. Dig right in!

Total prep time: 2 minutes

What’s in your bag:

  • A big bowl of veggie goodness over poached farro
  • Feta cheese
  • Meyer lemon vinaigrette

What you’ll need from home:

  • Nothing! Eat this one right outta the bowl.

How to prep:

Option 1: Hot. Remove the ramekins of cheese and dressing and pop the entire bowl into the microwave for 1-2 minutes. 

Option 2: Cold. Do nothing! 

Whatever option you pick, just drizzle that dressing and scatter the cheese allll over. Enjoy!
