Wanna know something kinda craaaazy? Eggplant is a fruit. Not only is it a fruit, but it is a berry. Like, WHAT!? So this could be considered a berry bowl, in theory! Either way—this vegetable, um, fruit we mean, is paired with black garlic, wood ear mushrooms, blistered cherry tomatoes, basil, some greens…and best of all, feta and Meyer lemon vinaigrette. All atop farro and barley, these whole grains will keep you satisfied and full. Enjoy your “berry bowls,” WECO Fam!

- A bowl of veggie goodness over poached farro + barley
- Meyer lemon vinaigrette
- Feta
What you’ll need from home:
- Nothing! Eat this one right outta the bowl.
How to prep:
Option 1: Warm. Remove the ramekins of dressing & feta and pop the entire bowl into the microwave for 1-2 minutes. Once warmed, shake your dressing like a polaroid picture, drizzle your dressing, add your feta, and dig in!
Option 2: Cold. Do nothing! Shake your dressing like a DIFFERENT polaroid picture, drizzle your dressing, add your feta, and dig in!
Whichever path you decide on, hot or cold, just drizzle that dressing over the top and devour!
