Roasted Tofu Rice Bowl

Happy Monday! We’re back at it again, folks- the methodical pendulum of time stops for none. Before we have an existential crisis over here, I think it’s time to talk about the roasted tofu bowl. Because if anything can pull you out of a funk, it’s a nice bowl of rice, roasted tofu, veggies, and some good dressing. I’m relying pretty heavily on this bowl to rescue me from the monotony that is the calendar year, TBH. The good news is, I’m pretty positive that it’s going to do the trick. Why? Well, let’s dive in a little deeper here. Roasted tofu is great. A super simple glaze, and high heat for short time. This is the foundation of flavor tonight, and as we all know from our years of construction and contracting work, a good foundation is downright necessary. Right? Roasted tofu, fluffy jasmine rice, marinated cucumbers… we could stop there and I would be absolutely THRILLED. Nothing better than rice and cucumbers, IMO. But wait, there’s more. Pickled veggies, fresh kimchi, and a soy-marinated egg round out the entire experience. Bringing freshness, funk, and flavor to an already overloaded bowl. It’s really hard to beat this one. But when you smother it in the chili-garlic dressing, well, you’re just gonna have to find out for yourself. To reheat, remove the ramekin of dressing, and microwave for a minute or two to take the edge off. Drizzle the dressing all over, and dive in. However, this bowl is also fantastic cold- I would recommend skipping the microwave, and instead simply adding the dressing and going for it. The choice is yours! Enjoy!

 

If you got a chili marinated chicken breast!

Very good call! Sometimes, a simple chicken breast is all you need to really bulk up an already nutrient and flavor-rich meal. While the tofu bowls may be a standalone dinner option for one, sometimes you may feel that you need a little extra protein on there- and luckily for you, we’ve got the perfect thing. A simple chicken breast, marinated in sweet chili sauce, and roasted to perfection. Again, if you’re going for the bowl cold, simply slice up the chicken and layer it right on top. Alternatively, you could broil or grill the chicken breast till it’s nice and hot, or just microwave it. Whatever you do- get that chicken breast on top of that bowl, and get after it! Enjoy!
