Reheating time: 10-15 minutes
Orecchiette means “little ears” but I think “little plates” would be a better definition. These adorable little darlings are like tiny saucers that are perfect for holding delicious nuggets of the other ingredients. In this case, we’ve made a robust medley of sweet and hot Italian sausage, toasted broccoli rabe, cherry tomatoes, and preserved lemon, in a white wine reduction. When sprinkled with crunchy parmesan breadcrumbs, this becomes a delectable mix of late summer goodness.
For the pasta:
Super easy to heat this one up. In a large saute pan or big ol’ pot, warm about 1 tablespoon of butter or oil over medium-high heat. If you are cooking for 3+, maybe double down on the butter or olive oil. Once the fat is nice and hot, add the sauce. Stir around to mix everything up and let the cherry tomatoes stew a little! Mix in the pasta once it begins to warm up. Add a splash of water- just enough to coat the pasta, so that the butter begins to emulsify into a sauce. For 1-3 orders, about 1-1.5 tablespoons, and double that for 4+ orders. Once you’ve added the water, keep stirring the pasta and sauce over medium heat until they are glistening and steamy, then kill the heat. You’re ready to plate! Scoop the pasta and sauce into a shallow bowl, sprinkle breadcrumbs on top, sea salt, and some fresh cracked black pepper. Enjoy!
For the mixed greens:
Very easy for this part! Just toss these in a bowl, dress with the lemon dijon vinaigrette, give them a season, and toss to coat the leaves evenly! Once fully mixed and dressed, give them a taste to make sure the seasoning is on point, and plate them up 🙂
For the focaccia:
This makes the dish – the indulgent way to enjoy this is to cut the focaccia in half like a bagel, smear some butter on both cut sides and griddle it till it’s hot and crispy. Need it healthier? Just pop it in the toaster. The key is that you use it as a vessel to mop up any excess sauce from your pasta. Or, enjoy it on its own while you prepare if you can’t resist! 🙂
