Shakshuka

Hey Fam! It’s brunch o’clock and you are JUST in time. Thank goodness, we know you’re hungry! Now, turn your oven on to 375F… and let’s talk shakshuka. 

This dish, ohhhh this dish. We love it very much, in case you couldn’t tell. Originating in North Africa + the Middle East, shakshuka is traditionally made of saucy tomatoes, onion, garlic and spices with eggs poached on top. Ours is a bit of a ~WECO riff~ on the traditional version, because our creative culinary team is always working up some magic with whatever ingredients we have available. Today you’ll taste eggplant, mushrooms, onions, bell peppers, zucchini, kale, smoked paprika, and a leeeeetle bit of honey for sweetness. Like any WECO meal, you’re the boss. So, rip your pita, dip your pita, load it up with saucy eggs and yogurt, or eat it in a bowl all together. Seriously, you can’t go wrong. We hope you enjoy 🙂

What’s in your bag:

  • Your roasted veggie shakshuka!
  • Sumac yogurt
  • Pita
  • Braised lamb (if you ordered it!)

What you’ll need from home:

  • Sheet tray (optional, for the pita!)
  • Saute pan (if you ordered the lamb!)

Total prep time: 15 minutes

The Shakshuka

  1. Preheat the oven to 375F.
  2. Remove the lid to your shakshuka. 
  3. Place in the oven for 10-12 minutes or until warmed to your liking.

The Pita

  1. Toast in a toaster oven OR place in the oven on a sheet tray for the last five minutes of warming your shakshuka!

The Braised Lamb (if you ordered it!)

  1. Heat a saute pan over medium heat and add a drizzle of olive oil.
  2. Add your lamb and cook for 5-6 minutes, stirring frequently, until hot and a little crispy.

The Sumac Yogurt

  1. Best served cold!

To serve: If you ordered the lamb, arrange that evenly on top of your shakshuka. Scoop an egg (with lots of sauce and, if you ordered it, lamb) into a bowl, drizzle on some sumac yogurt, and enjoy with your pita 🙂
