Hopefully you have all been able to dig yourselves out of our first real snowstorm of the season. We spent all morning digging WECO out of a massive snowdrift, so needless to say we’ve worked up an appetite. What better to warm your body and soul than a fantastic WECO dinner! Tonight’s shortrib feast does just that. Big ol’ chunks of beautifully marbled braised short rib, warmed in a caramelized onion and truffle jus, plated up alongside Chef Ambo’s magical potato gratin- a meal fit for royalty. Wait till you try the potato gratin. It’s the real deal. Don’t sleep on that broccolini either- Theo made it with just the right amount of spice, and the fried garlic adds the crunch that we all desire. The second option is a banger too. Crisp cukes and peppers, chewy noodles, citrusy tofu, and that dressing… Yum. Enough of my shameless hype, get in there!
For the shortribs:
Preheat your oven to 375F. In a high sided, oven safe pan (preferably with a tight fitting lid), warm the truffle jus with a splash or two of water. Once it’s simmering, add the shortribs, and some more water so they are sitting in roughly ½-1” of jus/water. Bring it up to a simmer, pop the lid on, and throw them (don’t actually throw the pan…) in the oven for 5-10 minutes, until the shortribs are tender and warmed through. Heating times will depend on your oven, just keep checking them!
Once the shortribs are tender and warmed through, remove them from the pan, and return the pan to the stove. Add a (healthy) smack of butter (or not if you’re dairy free), and reduce the sauce over medium heat until it is viscous and smooth. Spoon this all over when you plate it up!
For the potato gratin and the broccolini:
Pop the pieces of gratin onto a sheet tray lined with foil with the broccolini, and put them in the oven with the shortribs. They should take roughly the same amount of time to heat. Once the shortribs come out, turn your oven to low broil and give the gratin and broccolini some color.

This bad larry is all set for your immediate consumption (or for lunch tomorrow, or a midnight snack- no rules here). Just drizzle that roasted sesame dressing all over, and prepare for enlightenment.
