Shrimp Papaya Salad

Let’s all take a second to appreciate fruit. We’ve been eating a lot of fruit at my house lately. Very exciting news, I know! Pineapples, bananas, berries, the usual suspects, for sure- but the other day we got a big ripe papaya for smoothies, and boy was it delicious. But as I was eating the tender, juicy orange fruit, I couldn’t help but marvel at the contrast between the ripe and unripe papaya- same exact fruit, completely different appeal. Green papaya is starchy, crunchy, and not sweet, but bitter/sour- a complete 180 from what was in my smoothie. It’s amazing how time and temperature can cause such a transformation. Tonight’s shrimp and papaya salad mirrors some of the transcendent prowess of the papaya fruit- starts off bitter, crunchy, and tangy, and finishes sweet and fresh. To prepare, simply toss everything in a bowl, dress it up with the cilantro lime vinaigrette, give it a light seasoning with salt and pepper, and mix it up! Top with the chili roasted peanuts, and enjoy 🙂
