Herb marinated shrimp sits on a bed of wild rice with sundried tomato and spinach acting as little gems throughout. The pesto is the finishing touch, but also the main attraction—its flavor really makes the bowl WECO-worthy. And that it is, indeed. Thanks for another wonderful week.   • Sundried tomato vinaigrette

What you’ll need from home:

  • Nothing!

How to prep:

  1. Remove the ramekin of vinaigrette.
  2. Put the whole bowl in the microwave for 2-3 minutes. 
  3. Grab a fork and go!
