Spring Lasagna!

Reheating time: 10-15 minutes

What does Garfield hate??? Mondays! What does Garfield think makes everything better??? LASAGNA! We are here to solve the Monday problem, with the everyday solution- lasagna. With it being spring and all, we decided that traditional lasagna fillings just weren’t going to cut it. Instead, we’ve got a fun and fresh take on the grumpy orange cat’s favorite, featuring all sorts of springtime flavors. Asparagus, peas, baby spinach, tons of herbs, and of course, sausage… of the fennel seed variety… layers on layers of goodness in here tonight! Plus, a crunchy mixed greens salad to wash it all down with. Super simple tonight, kids. Preheat that oven to 400F, and let’s get down on some lasagna. Get in there!

For the lasagna:

Two approaches here: the fast and lazy way (think Garfield, but he would probably also eat it cold… Garfield is a savage. Have you seen what he does to that guy John? I mean seriously. Are your cats like Garfield? I wanna hear horror stories. Nobody compares to Garfield. Gives cats a bad rap, he does), *catches breath after extremely long parenthesis break* or the long but better way.

Fast way: microwave for 3-4 minutes until hot

Longer and better way: Jam a couple toothpicks down the top of the lasagna to hold the layers together, drizzle some olive oil on the top (or rest a fat pad of butter on there), and arrange your lasagna pieces in a large casserole dish. With your oven preheating or at 400F, pop the casserole tray in there, and go scratch some curtains or kick over someone’s coffee mug for 10-15 minutes. Keep an eye on the lasagna in the oven, they tend to want to slide all over the place- especially if you forgo the toothpick supports. Once it’s hot, and caramelized on the sides, and the filling is all gooey, and it smells amazing… Wipe the drool off your face, and pull out that tray. Carefully scoop onto a plate, aaaaaaand, bliss. Finally. 

For the salad:

Toss the leaves and shaved veggies in a bowl, and dress them up with the roasted fig and pear balsamic. Season with s+p, plate it up, and cover with candied walnuts and goat cheese. Happy times! Monday, solved. #weareweco <3
