SURF AND TURF

Reheating time: 10-15 minutes. Oven @ 375

 

Congratulations! You made it in for one of our most popular dinners in a loooooong time. Y’all are crazy for surf and turf. Who wouldn’t be stoked on this dinner tonight? Tenderloin medallions, fennel poached shrimp, creamy asparagus + tarragon risotto, and a DIY wedge salad with sundried tomato ranch dressing. Doesn’t get much better than that. Or does it? Get in there!

For the tenderloins:

So – we gave you guys truffle butter to put on the potatoes. We know, very kind of us. You’re welcome. However, on second thought, the truffle butter may be better applied to the tenderloin medallions! Just saying. 

To reheat the tenderloins, we recommend the grill. Just mark them on either side, and cook through to your desired temp. Alternatively, the broiler works well, but if you’re not grilling, suggest taking the time to sear them in a pan with some butter. Get a cast iron or carbon steel pan (or any pan, doesn’t really matter) hot over medium high heat, add some butter or oil, and pop the tenderloin pieces in there. Give them a hard sear for 1-2 minutes on each side, then pull them out to rest. Or, if you want more cooked steak, leave them in the pan till they reach the level of doneness you’re happy with. 

For the shrimp:

Grill! 100% grill. But if you aren’t grilling, as soon as you take the steak out of the cast iron, add a little oil and pop these beauties in for a minute or so per side.  Outrageously good either way!

For the potatoes:

Easiest potatoes you’ve ever made in your life. Just place potatoes in a pan with A LOT of truffle butter. Roast in a 375°oven for 10 – 15 minutes until toasty warm. Or heat them in the pan on the stove if you don’t want to turn on the oven. Just be sure to stir.  

Plating:

Once it’s all hot and ready, slice the steak up! Plate up alongside the potatoes and shrimp, and maybe put some truffle butter on top??! Don’t let it go to waste!  Break the rules!

For the wedge salad:

You may be tempted to have this on it’s own plate, but we’re equal opportunity eaters – commingle and enjoy!  Your call!  Either split this lettuce in half for the true wedge experience, or tear it up! Cover with sundried tomato ranch, give a season with some salt + black pepper, and scatter all the goodies (BACON!!!) on top. Enjoy 🙂
