Sweet Potato and Zoodles

What did the spaghetti call the zoodle? IMPASTA!!!

No impastas here, just gluten free zoodly goodness. Ya know, zoodles, our spirit animal, or patronus, if you will, for all you Harry Potter people out there. These zucchini based noodles build the base of this bowl, and are topped with miso roasted sweet potatoes, green beans, carrots, scallions, and marinated tofu! The tofu we might equate to the marshmallows in Lucky Charms,  you’re either the kid that eats them all first, saves them for last, or like a real crazy person, just eats the bowl of cereal like normal. What kind of kid are you??

What’s in your bag:

  • Your bowl 
  • Sesame citrus dressing 

What you’ll need from home:

  • A fork!

How to prep:

  1. We like to enjoy this cold, the zoodles keep their crunch that way. Toss the bowl with the sesame citrus dressing and have at it!
