(Tofu) truck yeah! There’s room in the back, hop on in! We’re goin’ for a ride. Roasted tofu covered in an ooey, gooey, sweet yet tangy sauce is sure to be your fave, that’s our bet. But how about this coconut milk mango rice—who even knew you could do that with rice?! Elevated rice for sure. Oh, and those plump peppers with stems? Those are shishitos. You can simply pluck them up by the stem and munch on the pepper, tossing the stem to the side once you’re done. Finger foods=more fun. With pico de gallo, shiitakes, and green beans, you may never want to get off this truck. Especially when you dip your pinky into that lime dressing for a lil pre-meal taste. Wowza.

What you’ll need from home:
Total prep time: 2 minutes
- Remove your container of pico and dressing and pop the bowl into the microwave for 2 minutes.
- Once nice and warm, top with your pico, toss with the dressing, and chow down!
