(Tofu) truck yeah! There’s room in the back, hop on in! We’re goin’ for a riiiiiide. Straight to the dinner table, that is. To plop our butts down and chow on that beautiful bowl ya got there! Roasted tofu covered in an ooey, gooey, sweet yet tangy sauce is sure to be your fave, that’s our bet. But how about this coconut mango rice—who even knew you could do that with rice?! Elevated rice for sure. With pico de gallo, oyster mushrooms, and green beans, you may never want to get off this truck. Especially when you dip your pinky into that lime vinaigrette for a lil’ pre-meal taste (yes, we’re advising you do that!) Wowza. Beep beep! Tofu truck out. Deuces till next time!

What you’ll need from home:

Total prep time: 2 minutes
- Remove your container of vinaigrette and pop the bowl into the microwave for 2 minutes.
- Once nice and warm, toss with the vinaigrette, and chow down!
