Tuscan Chicken Breast & Toasted Orzo Bowl

Happy Wednesday WECO peeps! This bowl is easy peasy, feta cheese-ey, and ever so dreamy. We know that in each bowl there’s a favorite ingredient, and we have to admit, in this bowl we just don’t have one. The herby chicken breast and curried orzo each bring their own universe of flavors, and the result? A cosmic collision of bad-ass thinking. We are all about experimentation and ground-breaking research, some may even call us scientists. Which is to say, we like playing with our food. Moral of the story is this bowl packs a flavor punch, with zucchini, chickpeas, and even a cherry tomato vinaigrette (cue the immersion blender!) 

Total prep time: 2-3 minutes


What’s in your bag:

  • Your bowl of yumminess!
  • Feta & mint
  • Cherry tomato vinaigrette

What you’ll need from home:

  • Nada!

How to prep:

  1. Remove the feta & mint and vinaigrette from the bowl. Those lil guys will have to wait their turn!
  2. Pop your bowl into the microwave for 1-2 minutes until warmed through.
  3. Top with feta & mint then drizzle over your vinaigrette.
  4. Get to chowing down!
