    a keeper…

    there are two dishes i always (well, almost always) order when they’re on the menu: eggplant parm and braised short rib and polenta.

    what I like to do is heat the braising liquid and jus together and thicken with a little beurre manié, then add the meat. when it’s warm, i shred the meat and divide it in two. one i eat,; the other goes in the freezer, which i’ll enjoy with mashed potatoes.
