In partnership with Leslie Lee, longtime member of the WECO Fam! We are thrilled to have Leslie share this recipe with the WECO community.

Leslie’s version of the traditional Bibimbap stars shaved beef seasoned with garlic, tamari, and sesame oil. The base of this bowl is a medley of Jasmine rice, farro, and tricolor quinoa, and you’ll add in alllllll the colorful veggies like:

-Sauteed kale with sesame
-Roasted zucchini and roasted onions with sesame
-Roasted shiitakes with scallions
-Thinly sliced & roasted bell peppers
-Roasted cucumbers
-Shredded carrots
-Sliced daikon radish

With Gochujang and kimchi (both on the side) for topping off your Bibimbap! Plus, Bean Sprout Soup comes on the side for rounding out this beloved meal.

    Could have used a sauce or something to tie it together. Maybe I should have gone for the optional fried egg? The kimchi was a highlight!

    Absolutely delicious!

    Great flavor, great portion. The kimchi and gochujang were tasty. This was far better than the other bibimbap (no offense to the chef!) - we would love if this were a regular!

    Love the crisped rice and all the veg with the gochujung sauce and egg. So satisfying. Bean soup a nice add. Yum!

    GREAT!

    Best recipe in a while....lots of interesting veggies and great sauce. Next time use Brown rice instead of white with quinoa for more taste and nutrition. And a choice of tofu instead of beef would be appreciated.
