Mango-Glazed Salmon with Fried Rice

Prep time: 8-10 minutes oven or 2-3 minutes in the microwave

We are pretty big fans of this slammin’ salmon you’ve got here, and we hope you will be too. Glaze up your salmon and pop it in the microwave or oven, the rest is pretty simple. Hope every bite is better than the last, Fam!

In your bag

  • Teriyaki salmon with sweet chili mango glaze
  • Fresh bok choy with chili crisp vinaigrette
  • Veggie fried rice with scallion, sprouts & spring peas

At home

  • Aluminum foil-lined sheet tray & a little oil (optional) or microwave-safe bowl & damp paper towel
  • Nonstick pan with a little oil or microwave-safe bowl & damp paper towel
  • Microwave safe bowl & microwave safe lid

The Salmon

Option #1 (in the oven)

  1. Preheat your oven to 375°F.
  2. Remove the lid to the compostable tray your salmon came in. Make sure your salmon is skin-side down and spoon some glaze over top of the fish.
  3. Bake for 8-10 minutes (in the tray) or until warmed to your liking. *Optional - transfer your salmon to a foil-lined sheet tray and follow the instructions above. 

Option #2 (in the microwave)

  1. Place salmon on a microwave-safe dish, pour glaze over the top of the fish, cover with a damp paper towel, and heat in 30 second increments until heated to your liking. 

The Rice 

Option #1 (on the stovetop)

  1. Add a little oil to a nonstick pan over medium-high heat. Once hot, add in your rice and saute for a few minutes until hot & slightly crispy!

Option #2 (in the microwave)

  1. Add rice to a microwave-safe bowl, add a splash of water over the rice, cover with a damp paper towel, and microwave until warmed to your liking.

 The Bok Choy

Give your bok choy a chop into 1 inch pieces. Place your bok choy in a microwave-safe bowl, add a few tablespoons of water, and cover with a plate or microwave-safe lid. Microwave for about 2 minutes, until the bok choy greens are bright green & tender and the stems are softened slightly. Drain excess water, then mix in the chili crisp vinaigrette and season with S&P.
