Meet the Chef

Why did you start cooking?

I started cooking after my family made me realize that cooking for the family all the time is cool, but you could do it for other people too.

What’s your cooking background?

Started off young learning the joys of food by raising pigs, rolling out pizza, and how to make “gravy” not sauce. Started professionally in different restaurants in my home state. I took a risk and moved to Texas where I learned about southern bbq, gulf coast cuisine, and mixing traditional Italian dishes with the influences of the south.

What’s your favorite type of cuisine to cook?

My favorite type of cuisine to cook would be down to earth Giampietro family recipes, it’s a true comfort.

What’s your walkout song?

My walkout song would be “Can you get to that?” By Funkadelic

If you could have any super power, what would it be and why?

It would be so cool to be the next Avatar, be the master of all FOUR elements, DUH!

If you had to eat one thing for the rest of your life, what would it be?

Would totally eat pig, one “thing” but so many options.

What dish have you created that you’re most proud of?

My favorite dish that I’ve made would be Tortelloni Fazool. It was a mix of beans, shredded escarole,  blistered tomatoes, pancetta, and mushroom stuffed tortelloni all in a Parmesan broth.
