Meet the Chef

Why did you start cooking?

My dad loved cooking. He used to tell me stories about being a line cook when he was young.  I guess he passed his curiosity for food on to me.

What’s your cooking background?

I started washing dishes when I was a kid. I’ve worked in restaurants since then from Nantucket to palm beach. I usually tell people that I work in kitchens because it’s the only thing I know how to do, but the truth is I stayed in kitchens because I fit in, and I loved the lifestyle.

What’s your favorite type of cuisine to cook?

Is pasta a cuisine?

Why do you like to cook?

I like meticulous details, and organized plates, and messy prep, and all the insanely creative people you meet, I enjoy everything that cooking is surrounded by. I am at home in a kitchen… also I like to eat.

What’s your walkout song?

Probably Atlantic City… the band

If you could have any super power, what would it be and why?

Photographic memory… knowledge is power (but I stole that idea)

If you had to eat one thing for the rest of your life, what would it be?

My wife’s bread… or Peanut butter m&ms

What dish have you created that you’re most proud of?

I used to do this gathering at my house every Wednesday in college. We made carbonara… every Wednesday! And drank. I like to say that we perfected it…. we definitely made it a million times. I guess I’m proud of that dish. It brought people together in a way I never thought food could until that point in my life.
