Weco Quick and Easy: Sweet Chili Soba and Shrimp

30 minute dinner! With just a few ingredients!

This marinated chili shrimp and soba dish is fresh, hearty and packed with local goodies. After a long day, I want dinner to be
QUICK and EASY, and I’m sure you do too. The farms are in full swing, so we try to hit our farmers markets as often as possible, but spoiler alert: some grocery stores carry local veggies too, so if you can’t make it to a farm, check the tags when browsing the produce section! Swipe for the ingredients we used, and the final product! Recipe (guidelines, feel free to mix it up) below: feeds 2-3

INGREDIENTS:
-1 pound shrimp, peeled, deveined, and halved lengthwise
-I package (8 oz) buckwheat soba noodles
-1 cup chili sauce
-1 cup snap and/or snow peas, ends snipped
-Half one large cucumber, cut into half moons
-1 cup whole grape tomatoes sliced into 1/4 inch rounds
-2 tablespoons ginger, minced
-4 cloves of garlic, minced
-3-4 green onions or scallions, cut into thin rounds
-1/2 cup cilantro roughly chopped
-1/2 cup roughly chopped basil
-1 lime: half juice in noodles, half in salad
-butter and oil for pan
-salt and pepper to taste

RECIPE:
-marinade your shrimp in chili sauce
-prep your veggie cuts
-cook your soba noodles according to package
-while noodles are cooking, prep your cucumber and tomato salad. Put in a bowl, salt with 2 big pinches, squeeze lime, mix together, set aside
-once you’re noodles are done, strain, rinse with cold water until chilled, and set aside. Oil the noodles lightly to prevent clumping
-heat your skillet over medium heat
-when pan is hot, add a little oil and butter
-once the oil and butter is nice and foamy, add garlic and ginger
-when your garlic and ginger start to brown, add your shrimp
-cook your shrimp until they begin to turn white
-add the peas to the pan, and toss. Cook for about a minute.
-add noodles, toss around and get them all slathered with that buttery, chili goodness
-add your salt, pepper and lime juice. Remove from heat
-add all your fresh herbs and mix together
-plate, and add your cucumber/tomato salad on top
-DIVE IN.
