Thank you for all of the support during week 1! Over 25 families hopped on the WECO train and we couldn’t be more grateful!

As I type this newsletter, Gavin is excitedly writing our menu for next week! Here are a few things to look out for:

We are operating on a Tuesday-Saturday schedule this coming week (4/7-4/11), because Monday is suppose to be nice for a change, and we’d like to sit in our backyard and enjoy a rare beautiful day in these rather grey times.
TACO TUESDAY ain’t going anywhere! We will switch up the protein from week to week but it’s a fan favorite!

A tasty addition to next week's menu! For all you enchilada lovers out there, this ones for you. And if you're not an enchilada lover, well, we might just turn you into one 😋

We're offering up Chipotle Chicken Enchiladas and a vegetarian alternative of Roasted Fall Squash Enchiladas three days next week. The torched poblano crema is like WHOAAA, and the churros with chocolate dipping sauce are a dessert we're already dreaming (and drooling) about!

We're sending you on a trip to Baja California this week with some delicious Baja Shrimp Tacos on Thursday night featuring citrus poached shrimp, fresh mango salsa, pineapple-chipotle mayo, crunchy napa cabbage slaw with shaved veggies + citrus, and pickled red onions + lime.

You'll also find dinners like sweet corn + miso rigatoni, beef + broccoli lo mein, roasted mushroom polenta, and chicken marsala on the menu next week.

First off- it's weeCO week! What does that mean? This week is for the little ones, with all new kids dinners. We'll be sending voting cards so they can let us know how we did!

Secondly- Adults get some new dishes too! Wednesday's hot coal chicken and the wild rice stuffed bell pepper are gonna knock your socks off.

And finally- some favorite dishes are back on this week's menu! Tuesday has eggplant parm and Friday has BBQ, baby!

Beer braised bratwursts, poached carrots with celery root + leeks + pearl onions, rustic potatoes mashed with green onion butter, kale + garlic cream, cider braised cabbage + sauerkraut with pickled mustard seed, and caramelized onion mustard.
