Proving risotto for dinner doesn't have to be a labor of love, it can just be all love! The secret to our quick and easy version? Sending the rice prepped so you spend way less time stirring at the stove ;)
Arborio rice mixed with a luscious corn & mascarpone cream sauce, plus a bright mix of veggies (charred corn, peas, sweet cherry tomatoes).
Served with a vibrant basil coulis for drizzling on top, and Parm crumble for a hint of crunch.

Option to add on some lobster if you'd like!

    Very quick and easy to make. Added grilled shrimp on top and roasted asparagus. Made 2 hearty portioned dinners and even enough left over for a serving of lunch the next day.

    LOVED this risotto with just the rice & mascarpone! I didn’t use any of the other items that came with it, like the veggies, for example, because it was perfect as-is! My friend mixed in some of the veggies (picked out the tomatoes), which she liked a lot, but she didn’t use the basil coulis or the parmesan crumbles.
